Our bresaola is made from premium eye round, cured with salt, pepper, juniper berries and bay leaves, then air-dried for 8 weeks in our temperature-controlled curing room. The result is a lean, delicate cured meat with a deep ruby colour and a subtle, complex flavour. Serve thinly sliced with rocket, shaved parmesan, lemon juice and extra virgin olive oil for a classic Italian antipasto.
